I just wanted to say Happy New Years to anyone who stumbles across this blog or to any readers. Thanks for reading my blog. I really appreciate it. Also if you could click on any links on my blog it would be great every penny helps!!

I hope that this new year proves to better than last. Mine (last year) started with getting laid off which is not a good way to start a new year that's for sure. This year has started not too well either but it is only the beginning of this new year. I am really hoping things improve ten fold because we desperately need it. The various bad news I received in the month of December was more than enough to last a lifetime. So I am really hoping that is the end of the bad news and hoping lots of good news is headed our way.

The best parts of 2011? Here is a list (I won't bother with the worst things because there is just way too many (yes it was THAT bad lol).:

I finally received my HS diploma (with Honors no less)

I scored quite high on my college placement test

I scored so high that that I received a letter from the Honors department about taking some honors classes (unfortunately, these classes were not available online nor close to me so I could not take them)

I started college

On my two finals I received a B and an A

In both classes I ended with a B (though sadly, this was not good enough - long story, which boils down to I am unable to receive any student loans nor grants this next semester - which really sucks to say the least - this is how I am paying for our living expenses so now I have no clue what to do)

I bought my son a pdog (though she can be a massive little pest like she is being right this moment) :P

My son had no massive illnesses to speak of (always a good thing)

I won some various things from contests (now if only I could win some money or a car!)

Have you seen these yet? If you have a son like I do he would probably really dig these. They are toy trucks that are motorized. Here is a video on YouTube of them in action. I am thinking these are going to be a big hit this holiday season. They also have playsets and each one can connect to the other one for loads of fun. They do take batteries (2 AAA) but I am sure even when you run out of batteries they would still be lots of fun. Right now they are on sale at Target for $5.99 (original price $7.99) so now would be a good time to pick some up for this holiday season. I plan to go to Target this week and buy a couple to hold back for Christmas.

This is very exciting. I have been an Amazon Prime member for sometime now and I love it. I love being able to stream loads of movies and tv shows to my computer and my bluray player. We don't have cable and when I say we don't have cable I mean we get absolutely ZERO channels on our tv. So we use Amazon Prime to watch many shows and movies. We also have a Sony BluRay player and it comes with some channels loaded on it (which you have to have internet and wifi to access) and so we watch Cracker.com also since it is free. I have been watching loads of Fraiser lately and was very excited to find it on Amazon for free for Prime Members. Now they will be carrying The Wonder Years and X Files I am very stoked!!

I think I have about 17 of them so far. I am already on a second one for Algebra class and it is only 3 weeks in!!

Other than that I have not really been shopping. I pretty much have used up all of my Extra Care Bucks and haven't really been shopping there or anywhere lately. I am using up our stock pile and it hasn't even made a dent in it! I am just buying groceries but only items we absolutely need and when there is a good deal ($10 off coupon or $10 gift card with a certain purchase). We have a tiny fridge and freezer so can't stock up too much. Also have no cabinet space and a very tiny kitchen. But we do have certain food items stockpiled for awhile.

If Only Things Would Have Been Different....

Well, today I received in the mail an invitation to take some honor classes at my school. I scored high enough on my placement test that I have been chosen to take these classes.

Of course they are not offered at the 2 campuses nearest me. :( With my lousy vehicle and extremely limited hours in which my son will be in school (3 hours a day) this will not work. But nonetheless I am extremely proud of myself.

I grew up with a mother who constantly told me I would never amount to anything and no matter how many times I showed her awards I had won at school or my report cards (only times I got bad grades was for gym class everything else A and B's) she just said "so?". I really feel if I would have had a slightly normal family my life would have been way different than the many struggles I have endured in my years. This letter makes me both happy and sad. I see what could have been if only I had a caring family and not the family from hell.

So if anyone out there is reading this and you too have had a very unloving childhood just remember you are not alone. There are others like you out there. Just try to keep your chin up. I know it is hard but you have to. Even if it is just to spite them. :)

Spanakopita Recipe

Ingredients:

3 boxes of frozen chopped spinach .99 cents each = $2.97 (I recommend using 4 boxes)
1 small block of feta 8 oz $3.99 (I recommend using 2 blocks)
Dill Weed $1.59 (I bought the Badia brand which is in with the Spanish foods their spices are super cheap)
Pam cooking Spray (I used both the olive oil kind and the butter flavor) $2.89 each
2 large eggs $1.49 for a dozen
Athens Phyllo Dough $3.69 (only used 1 roll out of 2)
2 bunches of scallions or green onions (whatever you want to call them) $1.18
1/2 container of cottage cheese $2.79
1 bag of Success boil in bag rice (do not cook!)
salt and pepper to taste
splash of lemon juice
olive oil

So for $20.59 I had way more than enough to make a large pan and have certain items extra (Pam, eggs, dill weed, phyllo dough). At the restaurant I go to a small piece of spinach pie is $4.99 and I am guessing in the pan I just made there is probably anywhere from 9 to 12 pieces depending on how you slice it (possibly even more).

If I bought 9 pieces it would cost me close to $45! So this is a very good savings!

****Put frozen spinach and phyllo dough in fridge overnight to thaw.******

Preheat oven to 350 degrees.

Drain as much water from spinach as possible. This is my least favorite thing about spinach.

Wash scallions, chop both white and green parts up nice and small. Saute them in olive oil, sprinkle some dill weed (depending on your taste), a splash or 2 of lemon juice and salt and pepper.

After the scallions seem nice and sauted add the drained dry spinach and mix together and cook some more. To get all the flavors combined. Let cool.

In a very large bowl crumble up the feta. Try to smash it up as much as possible. Add 1/2 of the container of cottage cheese (I wasn't so sure about the cottage cheese but you can't tell). Though next time I will add 1 more pack of feta and 1 more pack of spinach. Combine feta and cottage cheese until they are mixed.

To large bowl of feta cottage cheese mixture add the spinach mixture. Mix really well. Eat some now if you must.

In another bowl crack the eggs and stir like crazy. Now add this to the spinach and cheese mixture. Mix everything up really good.

Open up 1 bag of boil in bag rice and mix throughout the spinach and cheese mixture. This will help to absorb any extra moisture from the spinach. This is actually the way they serve it at that restaurant. I was not aware they were being sneaky. lol

Now the fun part. Working with the phyllo dough. But I think I outsmarted it! I used Pam instead of brushing melted butter with a pastry brush on each sheet of it. I was scared that it would not turn out right but it seems and tastes just fine to me.

I used an 8x12 sized pan. Spray pan all over the inside and up the sides of it.

Unwrap 1 of the rolls of phyllo dough. Take 1 piece (it is very thin) and place it inside the pan. Spray pam all over it. Take another piece and do the same. Each time 1 piece at a time with Pam sprayed on it. Do this with about half of the roll (say 10 to 12 sheets?). Now add your spinach mixture evenly all on top of the sheets of phyllo dough. Now do the same exact thing with remaining sheets making sure to spray them. I read that you should score the top sheet to make things easier when cutting. Go for it if you want to. Spray top sheet as well.

Now throw it in the oven and check it at about 15 minutes to get an idea. Turn it around if needed. Put it back in for another 10 to 20 minutes depending on your oven. It should look pretty and golden. I highly recommend adding the rice because of the moisture of the spinach. My phyllo dough did not at all taste doughy and I am guessing this was the reason.

I have heard so many horror stories about how hard it is to work with phyllo dough. I didn't think it was bad. Of course I didn't make anything fancy I just layered them. I plan to make a Greek apple pastry with the remaining phyllo dough in a few weeks. I will again layer them in a pan.

Calorie and fat content: I have no clue! Just eat it and enjoy!!!

So a lot has been going on for me lately. Hence the reason there really hasn't been too many posts. I had a death in the family which I am still trying to push in the back of my mind so I don't have to deal with it just yet. I also have been getting things squared away for school. I should be starting school in August as long as nothing goes wrong prior (knock on wood). Some other things have been going on that is not at all good so I am trying to remain hopeful.

I have gotten a lot of things accomplished in the past few months and even if no one else is I am very proud of myself. Everything I have been doing and am doing I am doing for my son. If you have been following you know that my family is well not the most caring nor considerate to say the least. So at times it can get very difficult.

As I type I have a spanokopita in the oven. I have never attempted to make one before so hopefully it turns out yummy. I love spanokopita so much and so does my son. I made a huge pan full (no triangles for me). I didn't really go by a recipe (I rarely do) and just got ideas from various recipes I found online.

Depending on how things go in the next couple of months I hope to have more posts up each week. I have a lot of ideas brewing around in my head so it should be good.

I haven't been going shopping much (due to lack of funds) and the best part? It hasn't really effected us since we have been stocked up from previous sales.

Now I just have to stock up on the following:
Pur faucet refills
vacuum bags
cotton balls
rubbing alcohol
filters for my air purifier
filters for my dehumidifier
filters for my window unit ac

The timer just went off. Wholly molly! It is SOOOOOO GOOD!!! I will take some pictures of it and post later and give somewhat directions and kind of a recipe. lol

It seriously tastes like this one I like at a certain Greek restaurant.

So recently I had an issue (I think a storm fried them both even though I have a surge protector) with both my modem and my Vonage phone adapter (router). I was able to go to the cable company and get a replacement for my modem. So I was once again able to go online but I could not get my router to work. I sent my router back today and Vonage is sent me out a replacement today (which I should get in a couple of days - free of charge). I have been with them since 2004 I believe.

Well, my cell phone which is Virgin Mobile which is a pay as you go type (which is great for emergency use) costs 25 cents a minute and 7 cents a minute after that. I like it for the fact that I use it for emergencies (calling AAA for instance) and that I only have to add $20 every 3 months. But if I have to use it to call the cable company when my modem is not working it sucks cause I am on the phone for at least 20 minutes but again that normally does not happen to often. Well, of course this week was a week I needed the use of a phone constantly (I am not a phone person at all so I can go without a phone for long periods of time (days etc.). Unfortunately, I HAVE to make an EXTREMELY important call and today was trying to make it and all the wait times were anywhere from 38 minutes up to 60 so minutes! So yeah my cell phone so isn't going to work for that. So I went and bought magicJack from Office Depot today.

That was back in May and I have been using it ever since. I did get my Vonage back but I haven't gotten around to hooking it back up. Though that is because I have a hard drive to installed and replace ethernet adapter and I didn't want to have any issues. A friend was supposed to install both but has been MIA ever since so now I have to try and do it. The ethernet thing should be simple it is the hard drive that is making me nervous.

Not saying that MagicJack is 100% perfect though. You do have to actually be online while using it. I would advise against browsing online while on the phone because it will make voices kind of echo and sound funny. But as long as you just talk while on the phone and don't play around on your computer there is no issues. If you are not online your calls will go to voicemail. For basically 40 bucks a year it is a good investment. Of course if your internet is not working well then you are out of luck.

O.k. I am constantly talking about Puritain's Pride Vitamins because they are SO INSANELY CHEAP!! They have these awesome sales 2? 3? times a year? Where you buy 1 get 1 free or buy 2 get 3 free!

Well, the sale is back on. I have been trying to find cheap prices for my son's vitamins and yet still end up paying like $6 something for 2 60ct bottles (which of course are the ones that they are supposed to take 2 of each day) and that is with a bogo sale and 2 coupons. I think I did pretty good today at Kohls.

I had a $10 off $20 coupon, a $5 giftcard type thing that was sent to me and a 15% off coupon. The nice thing about Kohl's is that they generally let you use all of these together!

I bought myself 2 pairs or pants ($12, $8), shorts ($3) and then I bought my son a 3pk of monkey cups ($2.79), a monkey mug ($2.79) and a monkey split plate ($2.79). I only paid $14.88 with tax!!!

Factory Girl

This was a movie about Edie Sedgwick during the whole Andy Warhol Factory thing in the 60's. Lots of drugs and lots of sex. But maybe that is what the 60's were like? Not sure since I wasn't born until the 70's. It was an o.k. movie but there was a lot going on and very crazy paced. Though, I am sure this was to give you a feel of that time and that life. I thought the actor portraying Andy Warhol did a rather good job (but of course what do I know - I never met Andy Warhol). It was another sad movie about what drugs and alcohol can do to your life and how it can ruin you. Also I remember reading about how Andy Warhol seemed to use people and it shows in this movie (again never met him so I really don't know). I do enjoy Pop Art so I always liked his unique form of art. Also a big fan of Keith Haring. I won't lie I thought Hayden Christensen was absolutely gorgeous in this movie. He seemed to be portraying Bob Dylan though they just refer to him as "the musician" I guess there was a possible lawsuit if they would have said it was supposed to be him (something about it looks like she died because of him - which I would say it would have had more to do with Andy Warhol then Bob Dylan but that is just my opinion). Back to Hayden Christensen - his acting was so so but wow, he was extremely dreamy looking in this movie. Right now they are on sale at Target and Publix for $21.99. There is a Target coupon for $4 off and a manufacture coupon for $3 off. So you can get for as cheap as $14.99at both stores as long as that Publix takes Target coupons (each store varies). There is also a $3 off Publix coupon too so if you don't have a Target near you can get it for $15.99 using both the Publix and manufacture coupon.

I bought one today and will be using in conjunction with a Brita Pitcher because our water is that bad.

Deleting My Facebook Account

I no longer have a Facebook account thanks to an extremely rude person who reported me as spam.

Here is how many posts I had in the last 2 months on Facebook and you tell me if that is spam?

4 posts to my wall in May

6 posts to my wall in April

8 posts to my wall in March (which works out to 2 a week)

Yet, most people post numerous times each day and also have loads of posts of all the games on Facebook (which I did not do because I think those are annoying). Even though I found those annoying did I mark them as spamming? No.

I tried posting something on Wednesday and that is when I got the message (when trying to post) that my website link (this website) had been reported as being spam. I hadn't even posted anything yet in June and this would have been the first post of the month.

The thing that irks me the most (aside from just what a jerk the person is) is that I never friended anyone on Facebook they all friended me.

Everyone needs to understand that I am take up my valuable time to write in this blog. I don't get paid for it, I don't get brand new appliances, trips, hotel stays, car rentals etc. like a lot of the other bloggers out there do. Yes, I do use some affiliate links (which yes, I have a disclaimer - see side of my blog) but guess what? I have made less than $100 since I started writing in this blog back in 2008. And that $ includes sign up bonuses (which is a large portion of the $ I have made). I have also hosted contests on here with items I bought with my own money. I don't make a lot of money from my actual job (if I told you how little I made you would be shocked). I also don't have friends or family helping me out with anything. I do everything 100% myself. I pay for everything 100% myself. So this website takes up my time, so does Facebook and Twitter but I thought hey, maybe I can help someone else out with finding ways to buy things cheaper. I know if it weren't for my frugal ways we would not be able to make it. And I am sure there are plenty of other people out there who are in the same boat as me and if they found this website I could help them.

I spent over an hour on Facebook trying to find a way to contact them so I can this whole mess cleared up but there is no way to contact anyone who works for Facebook. I also made a new Facebook account and nope still could not post links to this blog. So there is no point for me to even have a Facebook account since it was only for me to direct people to this blog.

We have a new baby in our family. Yes, I know so many of the bloggers out there have recently welcomed a new baby in their family. So what makes ours so special? Well, he is a very cute baby. Yeah, yeah you say everyone thinks their babies are cute. No, really he is so cute. He was not planned (well, not more than a day of thinking if that) and we really don't have the space for him nor could we really afford him (I won't even tell you how much he cost and all his stuff cost - YIKES!!). But if we get rid of some stuff and sell some of our stuff (that we no longer use) then everything will be fine.

Today we welcomed a baby prairie dog into our family. He will cost us about $20 to $30 every 2 months I am guessing so we will have to make sure we sell that that much of our stuff every 2 months. Which shouldn't be too hard (hopefully). I also want to put about $200 in an account just for him for any vet bills down the line. So again I will try and get that money by selling our things we no longer need. Bonus it will make some more space in our home which we desperately need.

Again he wasn't exactly planned nor was he budgeted into our fiances but he was so cute and I didn't want to have to wait another year to buy one. They are kind of seasonal. I also didn't want to chance that they would once again be banned like they were years ago.

I just hope he makes a good of an addition as another one I had 13 years ago who was the best thing ever. Maybe this new one can somewhat fill that void that the other one left when he passed away. :(

I had been planning on buying my son a pet in a few years. I was thinking along the line of a gerbil or guinea pig but I am way much more happier and excited about a pdog!!! The greetings I will get when I come home everyday. Oh this is so exciting!!

I watched all of these about a year ago but just recently bought them all for a little over $15 (gotta love going out of business sales - aside from of course people losing jobs). So I recently sat down and watched all 3 in 2 days. I absolutely love these movies. They are not for everyone since there are some very disturbing scenes in them. Also not everyone enjoys subtitles. I did try reading the first book but did not make it through it. This was prior to watching the movies. So I will be giving it another try very soon. I really think Noomi Rapace and Michael Nyqvist played the parts perfectly. I don't think the American versions will come anywhere close to these original versions.

So I decided to start exercising. Now, this is something I do not mind doing at an actual gym but exercising in my house is another story. Since having a child I now can no longer afford the gym (the actual cost, the gas it takes to get there, and of course paying someone to watch my son while at the gym, not too mention the wear and tear on my car)so my only option is at home. Another issue with at home is that our home is SUPER TINY and VERY, VERY CLUTTERED.

It is already way too hot to go for walks (that's the south for ya!)so outdoor type exercising is out of the question. Unless I want to be found somewhere on the ground passed out from heat exhaustion.

So last week I bought Billy Blanks Tae Bo Amped DVD Set. I started using it yesterday. Wowzers, I can tell that if I actually stick with it, it will work. I admit I was only able to last for maybe 5 minutes but that is O.K. because eventually, it will be 10 minutes and so on. Baby steps here baby steps!

I figure if for 2 weeks all I can do is 5 minutes 5 days a week then I am o.k. with that. Because soon enough I will be able to do more time each day. As I was doing the exercises I was definitely feeling it. So that is always a good sign in my book.

I am going to track my results on this blog so maybe you want to join me too?

This was one of the movies that I bought at Blockbuster for 99 cents that I had no clue what it was about nor who was in it. It turned out to be a very good buy.

It was about a women dying from ovarian cancer and her four children who come home for those last 2 weeks. It was a very good movie with a good cast (Sally Field, Ben Chaplin etc.).

Went to CVS and decided to take advantage of the great Revlon Nail Polish sale.

Unfortunately, the $2 off Revlon coupons do not work on the nail polish (screen prompts no item found). Some stores probably will push it through but don't be alarmed if they don't. I am sure all of the CVS's are now scared about pushing coupons through and just wary of coupons now.

Why? Because of all the (insert plenty of 4 letter words) people who thought absolutely nothing of printing as many Physician's Formula coupons that they possibly could. Which FYI - just because a coupon is a pdf does not mean you can print as many as you want. The coupon was sadly being naive thinking people would not take advantage of them and print 10's, 20's, 100's of these coupons. Treat PDF coupons just like you would the coupons you print off of coupons.com (which means 2). Anyways, it seems people were printing many,many of these coupons to use at Target and CVS because there were giftcard deals and ecbs deals with this product. Guess what? These stores are not going to be reimbursed for all of these thousands and thousands of coupons. That means us honest coupon users are going to have even MORE problems using coupons thanks to these dishonest people.

I have a feeling some stores may even say no more printables and well, you can't blame them.

Anyways here is what I bought:

I wake up this morning and what song do I have stuck in my head? REM's "It's the End of The World as We Know It". lol

I remember when a few months back I found out about this so called end of days date (today): I was at Busch Gardens and I was in the stall. There was a sticker plaster with today's date claiming the end of the world. I get out of the stall and inform my sister hey, the world is going to end on May 21st. My sister exclaims good, now I won't have to turn 40 (her birthday is later this week). lol

Well, I am not one to believe this nonsense but just in case let's hope that today is indeed not doomsday after all. Just in case maybe tell all your love ones that you love them?

So today I bought gas. I paid $3.68 a gallon and I thought "wow, cheap". Just compared to what I have been paying the last month or so this is cheap. Which is completely insane.

Most places around me are anywhere from $3.75 to $3.87. But this place by my house always seems to be 5 to 10 cents cheaper. They are just some little no name place.

There is overage on the Nivea body wash coupons as long as you have other items in your cart then the whole $3 will come off. The Revlon Target coupons only deduct the whole $2 if the price is $2 or more. So if they are $1.27 then it only deducts $1.27.
According to my receipt it looks like he only charged me for 1 tweezer and not 2.

It's another scorcher in my home today. 90 degrees again. I don't know how we can live like this too much longer. It is only May so I fear what August will be like.

We have limited outlets (old home barely has any for some reason) and pretty much every single room is on the same circuit so that means you can't have too much plugged in at the same time or else you blow a circuit.

I was pleasantly surprised with this movie. I enjoyed it very much so. It is a movie based on the book "The Julie & Julia Project" by Julie Powell. It is about Julie Powell a married female living in New York who decides she needs to do something and decides on making every single recipe in Julia Child's book "Mastering the Art of French Cooking". She decides to blog about it. Meanwhile the movie also is somewhat based on Julia Child and the time she was living in France with her husband. Publix currently has a promotion (that ends on 05/11) where if you buy $25 worth or groceries you can get $10 off a gas card (the $50 ones) using the coupon in the ad. I admit I buy my gas at a no name place but for this type of savings I will go elsewhere. I ended up going 2 times this week and getting $25 worth of groceries (instead of 1 trip of $50) so I could buy 2 of these cards. I did spend way more this week then planned but I should hopefully have close to 2.5 weeks of gas with the 2 cards.

So I got a $100 worth of gas for $80. So sad that like 12 years ago it was only a dollar a gallon if that.

It is about King George VI (whom had a speech impediment) and his unlikely friendship with a common man (his speech therapist)who helped him deliver his speeches and deal with said impediment. Absolutely beautiful movie!

Easter

I hope everyone had a wonderful Easter. For us it ended up being a very long night. Right as we were about to leave it started down pouring so did not end up leaving my mum's until about 8:30 at night. It was a very nice time though.

I am beyond tired right now and feeling a tad under the weather (I have the worst allergies to my mother's dog).

I did already have wonderful breakfast/snack/early lunch consisting of the following leftovers:

piece of pumpkin bread
2 deviled eggs (made with spicy horseradish muster YUMMY!)
various cheese, pickles and olives

Now drinking some Cafe Vienna coffee and going to lay on the couch and watch "Unstoppable".

post office to check to see if I got any mail
then go and pick my son up from school

Will then come home and do dishes and try and clean up somewhat.

Went in hopes of scoring 2 Carefree pantyliners with that awesome coupon. But nope there was zip there.

Did buy the following since it was a good price for organic/natural products:

5 Annies Home Grown Cheese Raviolis $1 each = $5
5 Various Annies Home Grown Boxed Mac & Cheese $1 each = $5

Total = $9.95 since there is no tax on food and I also had my own bag (-5 cents).

According to the receipt I saved $3.95 off the canned ravioli and $3.20 on the boxed mac and cheese. So together I saved $7.15!

Upset that they apparently no longer carry the Annies Spaghetti O type with fake meat. Not sure what they are called but had planned on buying 5 of those also.

My Love and Hate Trip to Walmart Today

I went today to get pictures taken of my son. Unfortunately, even though they called me TWO times to confirm, it was not in the system or I should say they put the appointment at a different store. Can I say how EXTREMELY mad I was???? VERY UNHAPPY with Picture Me Portrait Studios. Wasn't offered anything for the inconvinence nor was the manager even apologetic about it. I did not have all day to wait around to be tried to fit inbetween other customers.

O.k. so that made me in a very, very bad mood. I needed to get my son's pictures taken and today was and pretty much is the only day that actually would work. Not sure when the next time on a week day in the morning we could do this.

On with the Walmart trip. Like I said I was irked so I am surprised my Walmart shopping trip worked out decently.

With gas almost $4 a gallon I need to find ways to pay for it. Our income has also gone down $384 a month!!!! That is a huge amount (at least to me it is). I am trying to cut my spending as much as possible. I truthfully do not spend much money a month so it will be hard to truly save much. I generally buy most of my items with either ECBs or RRs so to save actual cash I am going to have to figure something out!

Things I will not have to buy for a while are as follows:

We don't eat out, get takeout or go to the movies. I barely buy clothes for myself - generally once or twice a year if that and each piece is less than $10. My son's clothes all cost less than $6 each piece (including shoes) generally less than that. We do not have cable. We don't eat lunch out, don't buy coffee or drinks/snacks when out and about. Don't have car payments and credit cards are either paid off or very close. So not too sure what we can actually cut back on to help with the increasing cost of gas, electric and food costs.
